Israeli Cous Cous

1 small onion chopped 2 Tbsp oil 1 cup Israeli couscous (pasta product ) 2 cups hot broth (chicken broth is nice ) salt and pepper to taste
Saute the onion in the oil ( I like olive oil ) Add the couscous and cook and stir a few minutes. Add the hot broth and bring to a boil. Cover and simmer about 10 minutes or more or until liquid is absorbed Season to taste. A nice change from barley or rice- with poultry or meat dishes
Note: Israeli couscous is a dried pasta product resembling pearl tapioca in shape. Available at gourmet grocers, kosher food stores, Middle-eastern grocers.
