3 oz. sun dried tomatoes, chopped 1 or 2 cloves garlic, chopped very fine 5 green onions, sliced 1 cup chopped parsley 1/2 pound of feta cheese 2 cups couscous 2 Tbs. tomato paste 1/2 tsp salt Olive oil, to taste fresh ground black pepper, to taste
Soak the dry tomatoes in enough water water to cover. Drain and reserve soaking liquid. Combine the water from the tomatoes with enough water to make 3 cups. Put it in a pot and add the tomato paste and salt. Bring to a boil. Add the couscous, and if you have an electric burner, turn off the heat. The remaining heat will cook the couscous in 3 or 4 minutes. (for a gas burner, turn the flame very low.) Fluff the couscous with a fork, and while still hot add the garlic and soaked dried tomatoes. Let it cool for a while, then add the feta (crumbled) and green onions. Add the parsley last, so it doesn't cook, and some olive oil and black pepper, to taste.
