SEARCH RECIPES: LOCATION: Recipes >> Pasta >> Garlic Eggs    Garlic Eggs Pasta with Garlic and Eggs 1/2 lb. pasta your choice 2 eggs, beaten 1/2 cup olive oil 4 cloves garlic 2 Tbsp. freshly grated Parmesan cheese Salt and pepper to taste Put the pasta onto boil in plenty of salted water. In the meantime, heat the oil in a small frying pan and add the garlic. Saute just for a moment. Drain the pasta and toss all ingredients together. Salt and pepper to taste. It takes the basic oil and garlic pasta (good enough in itself) and kicks it up a few notches with the eggs, which add a wonderful creamy thickness to the sauce, as well as a protein component. Jeff Smith, the Frugal Gourmet, used to make a dish like this. it is fast, frugal, and delicious. The ONLY lack is a rather plain appearance, so I recommend adding some fresh green herb leaves on top, for plating.
