1-1/4 lbs. mild Italian sausages 1 onion, chopped 2 cloves garlic, minced 8 oz. uncooked lasagna noodles, broken into 2-3" pieces 2 cups chicken broth 2 cups water 15 oz. can diced tomatoes, undrained 8 oz. can tomato sauce 1/2 tsp. dried basil 1/2 tsp. dried oregano 1 cup mozzarella cheese, shredded
Remove and discard sausage casings. In 4-5 quart nonstick pan over high heat, combine sausage, onion, and garlic; break meat into small pieces and stir often until mixture is browned (about 15 minutes); add broth, water, tomatoes, tomato sauce, basil, oregano, and lasagna; boil, stirring often, until pasta is tender to bite (about 15 minutes). Ladle into wide bowls and sprinkle with cheese. Makes 4 servings.
