l lb Italian sausage, casing removed
3 cups ricotta
l clove garlic
1/2 tsp pepper
l Tbsp whole basil
2 Tbsp parsley flakes
1 tsp salt
l lb can whole tomatoes
2 6-oz cans tomato paste
12 oz lasagna noodles (about 14)
1 lb mozzarella

Cook the sauce. Remove the casing from the Italian sausage. Cook
and drain it. Add garlic, pepper, whole minced basil, half the
parsley flakes, salt, whole tomatoes and tomato paste.

Simmer 20 minutes. Mix the remainder of the parsley flakes into
the ricotta and cottage cheese.

Slice or grate the mozzarella. Cook lasagna noodles. Place a few
spoonfuls of sauce on the bottom of a l3 x 9 pan. Layer half of
the noodles, overlapping to fit p an. Spread half of ricotta mix.,
half of Mozzarella, then half the sauce. Repeat layers, ending
with sauce. Bake 375 F for 45 min.
