Macaroni & Cheese

1 1/2 cup elbow macaroni
1/4 cup margarine or butter
1 small onion, chopped
1/4 cup all-purpose flour
1/2 tsp. salt
1/4 tsp pepper
1 3/4 cup milk
8 oz. sharp process American or Swiss Cheese

Heat oven to 375 degrees Cook elbow macaroni according to package
directions and pour into colander and drain. Wash and chop 1 small.
onion Cook and stir over medium. heat margarine or butter and
onion, until onion is slightly tender. Stir in all-purpose
flour salt and pepper Cook over low heat, stirring all the time
until mixture is smooth and bubbly. Remove from heat. Stir in
milk. Heat to boiling, stirring all the time. Boil and stir 1
minute. Remove from heat. Cut sharp process American or Swiss
Cheese into small cubes and stir into milk mixture until melted.
Place drained macaroni in casserole. Stir cheese sauce into
macaroni. (spray the dish with spray oil) Bake uncovered for 30
minutes.
