Vegetable Manicotti

1 cup Monterey jack cheese, divided, shredded
1 large egg (or substitute)
3/4 cup light ricotta cheese
8.25 oz can whole kernel corn, drained
2.5 oz jar sliced mushrooms, drained
4.5 oz can chopped green chiles, drained
1 tablespoon fresh chives, chopped
1/4 teaspoon salt
6 manicotti shells, cooked
16 oz jar mild chunky salsa
1/2 teaspoon garlic powder
1/4 teaspoon dried Italian seasoning

Combine 1/2 cup Monterey Jack cheese, egg, and next 6 ingredients.
Stuff manicotti shells with mixture and arrange on a lightly greased
11x7" baking dish.

Combine salsa, garlic powder, and dried Italian seasoning, spoon
evenly over shells.

Bake, covered, at 350 for 25 minutes. Uncover, sprinkle with
remaining 1/2 cup of Monterey Jack cheese, and bake 5 more minutes.
