Print this Recipe    Orecchiette

1 lb Orecchiette
1 pound of Broccoli Rapa
1/2 Cup of olive oil
1 clove of crushed garlic
4 anchovies boned and cut into pieces
1/2 cup of dry white wine
Grated parmesan
Salt & Pepper

Cook the Broccoli Rapa in plenty of boiling water. When it is done, drain
it, reserving the cooking water. Gently brown the garlic in a pan with the
olive oil. Add the anchovies and mash them with a fork as they cook. Pour
in the wine, let it absobr the flavors, and add the Rapa. Season with salt
and pepper and cook for 15 minutes on a very low flame.

Meanwhile, cook the Orechiette in the reserved cooking water. Drain them
and toss them with the sauce and grated parmesan.
