Orzo Shrimp Sage

Orzo with Shrimp and Sage
1 cup orzo, uncooked 2 cloves garlic 3 green onion, diced 2 oz. jar diced pimiento 1/2 lb. medium cooked shrimp 1/4 cup chopped fresh sage leaves shredded parmesan cheese
Cook orzo in boiling water for 8 minutes; drain and set aside. Spray a skillet with cooking spray and saute garlic just until soft. Add green onion and pimiento and continue saute'ing just until onion is transparent. Add shrimp and saute a little longer until shrimp are heated through. Add orzo and sage leaves; stir to distribute sage leaves evenly through the orzo and continue to cook until sage is slightly limp.
Serve with shredded parmesan cheese.
(Note: You should not need to add oil to the skillet to saute as there is usually enough liquid on the pimiento to add the needed moisture. If you have fresh pimiento, you may need to add a teaspoon of oil or a little more cooking spray to keep the onion and pimiento from sticking)
