Simple Pasta Dough
2 eggs 200 g wheat flour (I usually use 100g cream flour and 100g fine wholemeal) 1/2 teaspoon salt 1 tablespoon oil
Place the eggs in a bowl, add oil and salt and stir well. Add about 5 table spoons of flour and stir to make a thin dough. Add this to the rest of the flour and knead until the dough is smooth and shiny. Wrap the dough in a moist towel and let it rest for about 30 minutes and then cut it using the pasta cutting machine.
Heat 3 litres (6 pints) of water in alarge pot. Add 1 teaspoon of salt and 1 tablespoon of oil. Put the noodles into the boiling water and stir well to keep them from sticking together. Reduce heat and cook the noodles al dente for a maximum of 3 minutes (take a first taste after 1 minute). Drain and rinse the pasta.
It is optional to melt some butter in the now empty pot and then stir with the pasta.
