Mom's Pasta Primavera
Serving Size : 6

1/2 med onion, minced
1 clove garlic, minced
1 lb asparagus, cut 1" thick
1/2 lb mushrooms, sliced
6 oz cauliflower, broken up
1 med zucchini, sliced
1 med carrot, sliced and blanched
1 cup half and half
1/2 cup chicken stock
2 tsps dry basil
1 cup peas
2 oz ham, chopped
5 scallions, sliced
salt and pepper, to taste
1 lb spaghetti, cooked
1/2 cup Parmesan cheese, grated

Saute onion and garlic in butter.

Add asparagus (or broccoli), mushrooms, cauliflower, zucchini, and
carrot. Saute. Add half and half, chicken stock, and basil. Cook
until slightly thickened. Stir in peas, ham, scallions. Season
to taste. Toss everything with spaghetti and Parmesan cheese.
