This is from Greek Cooking by Pappas - I've tried it and it's delicious.

2 large onions, finely chopped
1/2 c butter
2 1/2 lbs ground beef
2 8 oz cans tomato sauce
2 tsp salt
2 cloves garlic, minced
1 stick cinnamon
1 14 oz package elbow macaroni
1/2 lb grated romano cheese
cinnamon
custard sauce

Saute onions in butter. Add meat and cook until browned. (I used less
meat.) Add tomato sauce, salt, garlic and cinnamon. Cover and simmer
30 min. Remove cinnamon stick. Cook macaroni. In a buttered 9x13 inch
pan, layer macaroni, meat sauce and cheese. Dust lightly with cinnamon.
Pour custard sauce over macaroni, and finish off with cheese. Bkae at
350' for 45 min. Let cool slightly, then cut into squares.

Custard Sauce
1/4 c butter
1/4 c flour
3 c milk
1/2 tsp salt
1/2-1 tsp nutmeg
1/4 tsp pepper
6 eggs

Melt butter and blend in flour. Gradually stir in milk. Cook until
thickened. Add salt, nutmeg and pepper. Beat eggs until light and stir
hot sauce into eggs. This is basically a bechamel sauce, with more
nutmeg than usual.
