Pasta Putanesca

3 cups chopped tomatoes (Roma works best)
5 cloves of garlic minced
1/2 cup chopped fresh parsley
1/2 cup black olives
3 Tbsp capers
1/2 tsp anchovy paste (optional)
olive oil

Saute the garlic in the olive oil. Add tomatoes. Simmer for 5-10
min if you used Romas longer if you used regular tomatoes. Add
the olives, parsley, capers, and anchovies paste (optional). Simmer
for about a minute.

Serve over your favorite pasta (angel hair goes very well).

serves 3
