1 tablespoon unsalted butter
1 tablespoon extra virgin olive oil
1/2 skinless, boneless chicken breast, cut into cubes
Salt to taste, optional
Freshly ground pepper to taste
1/2 teaspoon grated nutmeg
about 1 ounce mortadella, cut into large pieces
1 small egg
In a small skillet, heat the butter and the oil over medium heat.
Add the chicken and cook, stirring, until brown, about 8 to 10
minutes. Season with salt and pepper. Place the chicken in a food
processor and add the remaining ingredients for the filling. Process
until very finely chopped.
