This is my favourite seafood lasagna recipe. It's a Weight Watchers recipe that I got years ago.

SEAFOOD LASAGNA

1 cup chopped onions 1 clove garlic, minced
2 Tbsp olive oil 4 Tbsp flour
2 cups nonfat milk 3 oz grated Swiss cheese
2 cups cooked chopped fresh spinach, drained
1 oz grated Parmesan cheese 1/4 tsp nutmeg
12 oz cooked seafood 3 oz lasagna noodles
1 cup sliced mushrooms

Cook onions and garlic in oil. Stir in flour, cook lightly. Gradually
stir in milk, stirring until thickened. Stir in Swiss cheese. Remove From
heat.

In a bowl combine 1/2 the sauce with spinach, Parmesan cheese, nutmeg and
seafood. Spread mixture in the bottom of a casserole dish. Cook noodles
and layer over spinach mixture. Add mushrooms to remaining sauce and
bring to a boil, spread over noodles.

Cover and bake at 350F for 30 minutes.

Makes 4 servings.
The Weight Watchers count for each serving is:
2V, 1 1/2FA, 1/2M, 2P, 1B, 50 cal (or 3g fibre and 20g fat)
