Awesome dish - quick, easy, colorful and delicious!, February 21, 2007 - 09:14 PM

I made this for the first time tonight and while it's low fat it's not short on flavor as some dishes are. It has very few ingredients, is easy to make (I bought shrimp already peeled/deveined), cooks up quickly and makes a very nice looking and colorful dish with the roasted red peppers, green spinach and yellow pasta. Hubby raved about it and the nice thing is it's not a real heavy dish.
