Fine Noodles with Smoked Salmon, Caviar and Creme Fraiche
2 Portions as a starter

150g easy cook noodles
1 Tbsp butter
6 Tbsp creme fraiche
100g smoked salmon, sliced finely
2 tsp caviar
1 Tbsp dill leaves
1 Tbsp chervil leaves
freshly ground black pepper

2 tsp creme fraiche
2 tsp caviar
2 dill, sprigs

Bring a saucepan of water to the boil. Add the quick cook noodles
and cook them for 3 minutes or as directed, so that they are just
cooked. Drain them lightly, so that they are still wet. Return them
to the saucepan off the heat. While the noodles are still hot add
the butter and toss it so that it melts and coats the noodles. Then
Stir in the creme fraiche, followed by the smoked salmon, caviar,
dill, chervil and pepper to taste, lightly toss the noodles so that
the ingredients are well distributed.

Twist the noodles on a carving fork or large fork and place the
noodles in the centre of each plate. Place a sprig of dill on the
top of each serving, followed a generous teaspoon of creme fraiche
and finally the caviar. Serve.
