French Cheese Pastries
2 cups sifted all-purpose flour 1 tsp salt 3/4 cup shortening 5 - 7 tbsp cold water
3 tbsp butter 1/4 cup flour 1/4 tsp salt 1 cup milk 1 cup shredded sharp cheese 1/2 cup shredded Parmesan cheese
Make a plain pastry of the first four ingredients. Mix flour and salt, cut in shortening and add enough water till ingredients form a ball.
Make a white sauce of the next 4 ingredients. Melt butter, add flour, then add milk, stirring until mixture is thick. Add sharp cheese and stir until melted; set aside.
Cut pastry in half; roll each half to an 11 x 7 rectangle (1/4 " thick). Line bottom of 11 x 7 " baking dish with one piece of pastry. Spread cheese sauce over it. Top with remaining Pastry. Sprinkle with Parmesan cheese.
Bake at 450 till pastry is golden, about 20 minutes. Cut into rectangles and serve hot. Makes 12 servings.
