1/2 cup butter or margarine
1 cup boiling water
1/4 tsp. salt
1 3/4 cup flour
4 eggs
4 cup vegetable oil
Granulated sugar

Combine butter, boiling water, salt and flour in a saucepan over
moderate heat. Beat mixture vigorously until it leaves the sides
of pan and forms a ball. Remove from heat and cool slightly. Spoon
into a mixer or food processor with a steel blade, and add eggs
one at a time, beating well after each addition. When all the eggs
have been added and mixture is thick, it should hold its shape when
lifted with a spoon.

Heat oil to 375*. Dip a tablespoon first in hot oil, then in batter.
Carefully drop tablespoons of batter into hot oil and cook until
brown on all sides. Remove from oil with a slotted spoon and drain
on paper towels. Sprinkle with sugar and serve hot. Yield 3 dozen
