Donut Surprises

15 g/1/2 oz yeast
4 tbsp lukewarm milk
225 g/8 oz plain flour
1/2 teaspoon salt
55 g/2 oz caster sugar
1 egg (beaten)
2 Tbsp vegetable oil
grated zest half a lemon

Mix the yeast with the milk. Sift the flour, salt and sugar into
a bowl and make a well in the middle add the yeast. Leave in warm
place 20 minutes or until frothy. Add the egg, oil and lemon zest.
Mix to a soft dough. Cover and leave to rise 3/4 - 1 hour or until
doubled.

150 ml/1/4 pint milk
50 g/2 oz milk chocolate
1 Tbsp custard powder

Warm 2/3 milk with choclate until melted. Mix remaining milk with
custard powder until smooth. Pour into chocolate milk. Return to
saucepan and heat while stirring until thickened. Cover and cool.

On a lightly floured board, knead the dough and divide into 8
circles. Place a spoonful of custard on each circle and draw up
sides to encase custard. Pinch closed to seal.

Place on an oiled tray 15-30 minutes to rise.

Deep fry 5 minutes at 180C/360F, turning several times.

Drain on paper towel then toss in caster sugar or an icing sugar/cocoa
mix.
