FASTNACHTS (Raised Doughnuts)

1 cup milk
1 cake yeast
1/2 cup warm water
1 tbsp. sugar
1/4 tsp. salt.
2 cups flour

Scald milk and let cool. Dissolve yeast in warm water and add to
sugar, milk, salt, and flour. Mix well, cover, let rise in warm
place overnight or until it has doubled in bulk.

3 tbsp. butter
1/4 cup sugar
2 eggs
1/2 tsp. nutmeg
flour

Cream the butter and sugar, add this to the risen sponge, with the
beaten eggs and nutmeg. Stir in as much flour as mixture will take
up to make a soft dough. Let rise again until doubled in bulk.
Turn out on well-floured board and roll to 1/2" thick. Cut with
doughnut cutter, let rise again, then fry in deep hot fat.
