OLIEBOLLEN OR DUTCH DOUGHNUTS

1 1/2 pkgs yeast
1 1/2 cup milk
3 cup flour
2 eggs
2 tbsp sugar
4 tbsp raisins, apples or currants
1 tsp. salt
Confectioners sugar
Large container of oil

Dissolve yeast in deep bowl with 3 tablespoons lukewarm milk. Put
flour into another bowl. Stir eggs and remaining milk into flour.
Beat with wooden spoon until smooth; add sugar, raisins and yeast
mixture. Cover bowl with cloth, let rise for 1 1/2 hours. Add
salt. Fry spoonsful in hot oil, turning over once. Drain on
absorbent paper. Roll in powdered sugar.
