OLE BOLLEN
(Ole Dutch Treat)

2 pkg. yeast
3/4 c. sugar
1 1/2 tsp. salt
4 eggs
6 c. flour, sifted
3 Tbsp. oil
1 tsp. cinnamon
1 medium orange rind, grated
2 Tbsp. lemon juice (juice of 1/2 lemon)
2 c. currants
3 c. milk
1/2 tsp. lemon extract
1 tsp. vanilla

Dissolve yeast in 1/4 cup warm water. Beat eggs. Scald and cool
milk. Combine milk, eggs, oil, sugar, salt, yeast, vanilla and
lemon juice in a large mixing bowl. Sift in 2 cups flour. Beat
thoroughly. Add currants, orange peel and finely chopped candied
fruit (optional). Add flour to make a thick batter. Let the batter
rise until doubled. Drop large spoonfuls of dough into hot oil (use
a deep fryer). Cook like a doughnut, until brown. Drain on a paper
towel. Sprinkle with powdered sugar.
