Eccles Cakes Makes 12 small
3 sheets of pre-rolled puff pastry 1 egg caster sugar 30 grams butter 1 cup currants 2 Tbsp mixed peel 2 Tbsp sugar 1/2 tsp nutmeg 1/2 tsp mixed spice
Preheat oven to 180 deg C or 360 F. Place butter, currants, finely chopped mixed peel, sugar and spices in a saucepan, stir over low heat until butter melts, remove, allow to cool. Cut pastry into 10 cm rounds with plain cutter. Place heaped teaspoonfuls of filling in centre of rounds. Draw the edges of pastry rounds up together to enclose fully (like a bag). Turn over, smooth side up on lightly floured board, flatten with rolling pin so that currents just show through pastry. Shape into ovals. Place on greased oven tray, brush with lightly beaten eggs, sprinkle with caster sugar. Make 3 cuts across the top of each (vertical and parallel). Bake for 15 minutes or until golden brown.
