Mincemeat Parcels Yield: 8 servings
1 packet filo pastry; defrosted 1 400 g jar mincemeat 1 orange; zest only 15 g butter; melted 1 tablespoon icing sugar
Trim the pastry sheets and cut into 24 squares approximately 15 cm. Place 3 filo pastry squares on top of each other at a slight angle to form a pointed "star". Place a heaped tablespoon of the mincemeat in the centre and add a little grated orange rind.
Carefully pick up the pastry corners to enclose the filling and press together to form a "parcel". Repeat with the remaining pastry and mincemeat to make 8 "parcels". Arrange on a baking tray and lightly brush the parcels with melted butter. Place in a preheated oven at 190c/ 375 F / Gas 5 for 10 - 15 minutes until crisp and golden. Dust with icing sugar. Serve hot or cold. Delicious with vanilla ice cream.
Note: Mincemeat in this recipe is the fruit preserve used in Mince Pies at Christmas - not ground meat. You can make this recipe with home- made mincemeat if you like. The recipe is on my site
