1 cup sugar 2 teaspoons baking powder 1/2 cup butter -- or vegetable shortening 2 teaspoons vanilla 6 large egg vegetable oil -- for deep frying honey -- for coating the balls
Blend the flour,sugar,and baking powder in a large mixing bowl. Mix in the shortening or butter with a pastry blender or a fork, then blend in the vanilla and the eggs, two at a time. The batter should be a very thick cookie dough. Knead the dough for 5 minutes, until very smooth.flour your hands when the dough gets sticky. Place the dough on your floured baking board, and form it into a large ball. Dust the dough lightly with flour, cover with a clean cloth, and let sit for 1/2 hour. Divide the large ball into 3 or 4 smaller balls. Roll each ball into 1/2 -inch rolls. Cut each roll into 1/2 -inch round pieces. In a deep skillet, heat enough vegetable oil for deep frying. Drop the balls (about a dozen at a time) into the oil, and fry until golden and crispy. Transfer to either paper towels or a metal colander to drain. While they are still warm, put the struffoli into a large mixing bowl. Heat the honey in a small saucepan and drizzle it over the struffoli while you gently stir them. All the struffoli should be lightly coated with the honey, Serve warm, piled in a mound on a serving platter.
