Print this Recipe    Bacon Pudding

Bacon Pudding

1 lb smoked bacon rashers
250 g packet real suet
500g self raising flour
1 large or 2 small onions, sliced
salt
pepper

Add water to the flour and suet to make a stiff dough. Roll out
to make a foot square of flat dough. Cover with bacon slices.
Cover bacon with sliced onion. Add salt and pepper to taste.

Roll up like a swiss roll put inside a tea towel. Tie the ends
with kitchen string. Put in a saucepan of boiling water (cover)
and simmer for 3 hours.

Serve a good slice with mashed potato, mashed swede, and onion
gravy.

Next morning slice the left over pudding and fry in butter for
breakfast.

This is the recipe that i still use today to make this good old fashioned Berkshire Bacon Roll (as my Mum used to call it). This is how my Mum made it for us during the 1960's and she still makes it weekly, today! The Suet amount is leathal by modern way of thinking but it has NOT done her any harm, as she is 80 years of age!! And still going strong!!! We used to have it during the middle of the week with lots of Buttery Mashed Potatoes, Carrots, Swede, Peas and Gravy with Bread and Butter to mop up all the Juices afterwards. This is a Great British Classic and hopefully I will be making and cooking this Berkshire Bacon Roll Pudding for the next 38 years when I will be in my 80's!!!! Thanks for the posting of this recipe and hopefully you and I will be able to keep this old favourite from dying out.

Have been looking for this recipe for years, my grandmother used to make "the bacon thing with slippery white edges" but I didnt know what it was really called, thank you so much for bringing back a huge fat steamed delicious slice of my childhood!v

My Mother was a Londoner living in Yorkshire (strange things do happen) she used to cook this for the family in the winter months. As she said a cheap, filling meal and tasty meal!! Unfortunately the recipe was never passed onto me and I have asked fellow Yorkshire folk about Bacon Pudding who have looked at me as possessed! The recipe was spot on just as I remember watching the lid of the saucepan banging away for hours on end. Well done excellent!!! Guess my family were poorer than most though we didn't use a tea towel but an old fashioned pillow case.
