Finnish Carelian Pies Serves 12 400 grams rye flour 100 grams wheat flour pinch of salt 25 grams melted butter 4 eggs 250 g butter Mix all the ingredients, let cool in the refrigerator for an hour or so. Meanwhile, make rice porridge. Take dollar-sized pieces from the dough, roll them really thin (about 1 mm), fill the center with rice. Turn the sides in. Bake in 250C oven for 15 minutes, cover lightly with melted butter. Put under a towel for half an hour while you prepare the egg-butter.
Cook the eggs hard, then mash them and mix with butter. Spread on the pies.
