CORN AND CHICKEN FLAN

1 large onion, chopped
1 Tbs oil
200g cooked chicken, shredded
250g whole kernel frozen corn
2 medium tomatoes, chopped
1/2 cup grated cheese
2 Tbs chopped parsley
1/3 cup self-raising flour
3/4 cup cream
2 large eggs
salt and pepper to taste

Preheat the oven to 180C. Lightly grease a 20cm round flan dish.
Saute onion i n oil, until softened. Add the chicken and cook
until just brown. Place the corn , tomatoes and cheese into a large
bowl and add the onion and chicken. Add the parsley then fold in
the flour. Lightly beat the cream and eggs and add to the

chicken mixture. Season. Turn into the prepared flan dish. Bake
for 35 minutes, until the top is golden and the mixture just set.
