Crab Cakes in Filo

6 ounces crab
1/2 cup white wine
8 filo sheets
2 teaspoons lemon juice
salt
6 shallot, sliced
4 ounce bottle sliced mushrooms
1/4 cup cream
melted butter

Fry shallots in a little butter. Add mushrooms; sprinkle with
lemon juice. Stirring, add crab meat and wine. Add cream, some
salt and pepper to taste. Reduce; cool slightly. Use two sheets
filo for each cake. Brush between layers with melted butter. Put
1/4th crab mixture on lower edge; roll up burrito-style. Brush
with melted butter. Bake on buttered cookie sheet for 15 minutes
at 400F.
