Fish Pie

1 pound fresh whitefish
Juice of 1 lemon
1/2 pound grated cheese
salt and pepper to taste
4 potatoes
1 egg
1 Tablespoon butter

Bake fish, lemon, salt and pepper for 1/2 hour at 200 degrees.
Mash cooked potatoes, butter and the egg and pipe into rosettes.
Bake until the tops brown. Top partially cooked fish with the
rosettes, cover with grated cheese and bake for another 1/2 hour
at 250 degrees. Serve with mushy peas or bubble and squeak.

This was quite nice, and simple too. I served it with baked tomatoes, to give the meal a bit of zing. And I didn't make the rosettes, just piled on the mashed potatoe and ran a fork through it. I would next time put the cheese into the potatoe or leave it out altogether. I also put a few herbs nad some lemon rind on top of the fish before putting the mashed potatoe on it, and mixed some fresh parsley into the mashed potatoe. Chives would also be nice.
