Print this Recipe    Navy Bean Pie

1-unbaked 9" pie shell
2 eggs, lightly beaten
1 cup evaporated milk
2 cups mashed, cooked navy beans
2/3 cup sugar
3/4 tsp cinnamon
1/2 tsp each: salt, ginger, nutmeg, cloves
Whipped cream (optional)

Preheat oven to 425 degrees.

Combine eggs and evaporated milk in a bowl. Add beans, sugar and
all spices. Beat at low speed of a mixer until well blended. Pour
into unbaked pie shell.

Bake at 425 degrees for 15 minutes. Reduce heat to 350 degrees and
bake for another 35 minutes or until knife inserted in center comes
out clean. Serve warm with whipped cream.

The outcome of this recipe did not meet my expectations. I was looking to make a more creamy sweet potatoe [like] pie, but ended up with something not as desirable. The texture of this pie was stiff and dense. If you prefer a very basic bean pie, this is the perfect recipe. If you'd like a more desert [like] pie, you may consider the following recipe: 2 cups Navy Beans (cooked) 4 Eggs 1 14 oz. can evaporated milk 1 stick butter 1 teaspoon nutmeg 1 teaspoon cinnamon 2 T. Flour 2 cups Sugar 2 T. Vanilla Cook beans until soft. Preheat oven. to 350 degrees. In electric blender, blend beans, butter, milk, eggs, nutmeg and flour about 2 minutes on medium speed. Pour mixture into a large mixing bowl. Add sugar and vanilla. Mix well. Pour into pie shells. Bake about one hour. until golden brown. Makes 2 or 3 Bean Pies.

This wasnt a very good representation of the bean pie. If someone is going to make a bean ppie, then they should get a recipe from a Muslim that is knowledgeable in making Navy Bean Pies. The real recipe calls for:2 cups cooked navy beans, 1 stick of butter, 2. Tablespoons of Flour. 4 eggs, 1 Teaspoon of nutmeg, 2 cups of sugar. 1 can of milk, 1 Teaspoon of cinnamon and 2Tablespoons of Vanilla. Cook you beans two days in advance after they have soaked over night. Cook them until soft. Let them then sit in a fridge for at least a day. The you need to get a food mill to grind the beans and get the shell off of them. All you need is the meat of the bean. Once you do this, add the rest of the ingredients to a blender and blend. Once that has been done, add your bean and re-blend. Once you do that add to you pie crust. This mixture should make three pies. But if you use the deep crust shells, you will only get two. Enjoy!
