1 cup cracker crumbs
1/4 cup butter, melted
2 cup onion, sliced thin
2 tbsps butter
3/4 cup milk
2 eggs, (slightly beaten)
3/4 tsp salt
1/4 cup sharp cheddar cheese, shredded
Mix cracker crumbs with melted butter, press into bottom and sides
of an 8 inch pie plate. Cook onions in 2 tablespoons of the butter,
stirring to separate rings, until onions are tender - not brown.
Place in pie shell. Combine milk, eggs, salt and dash of pepper.
Pour over onions, sprinkle with shredded cheese and dash of paprika.
Bake at 350 degrees for 30 minutes or until knife inserted comes
out clean. Serve hot.
