Quiche Lorraine

1 tablespoon soft butter
9 in deep dish unbaked pastry shell, well chilled
12 bacon slices
4 eggs
2 cups heavy cream
3/4 tsp salt
1/8 tsp nutmeg
1/8 tsp sugar
1/2 tsp tabasco sauce
4 oz grated swiss cheese

Spread butter over unbaked pie shell. Cook bacon until crisp, drain.
Crumble in small peices.

Beat together in blender eggs, cream, salt, nutmeg, sugar and
tobasco just enough to mix thoroughly. sprinkle pie shell with
bacon and cheese; Pour in crem mixture.

Bake in preheated oven at 425 for 15 min; reduce heat to 300 bake
40 min until point of knife inserted in center comes out clean.
Serves 6 main dish or 12 appetizer.
