Quiche

3/4 cup butter
6 oz cream cheese
2 cups flour

ham or bacon
1 onion, minced
1 T butter
1/4 cup grated cheese

1 large egg
1/4 cup milk
nutmeg
pepper

Beat butter with cream cheese and gradually add flour. Chill and
form into generous marbles, and press into tart pan. Put a teaspoon
of deviled ham, or sauteed crumbled bacon in each.

Saute onion in butter. Add grated cheese, mix it up, and spoon on
top of ham. Then make an uncooked custard from the egg, milk, nutmeg
and pepper.

Spoon evenly into tarts. Don't fill it to the brim as it will bubble
over. Bake at 450F for 10 minutes, and then reduce the heat and
bake for another 15 minutes till golden brown. I have made them
vegetarian with sauteed mushrooms and spinach instead of the bacon
and it works out just as well.
