Herbed Tomato Quiche

1 1/2 cups cream
2 eggs
2 egg yolks
2 Tbsp tomato paste
salt
pepper
4 Tbsp swiss or gruyere cheese
2 tomatoes, cut into slices
2 Tbsp chopped parsley
1 Tbsp chopped fresh mixed herbs (lemon thyme, oregano, basil, chives)
3 Tbsp grated parmesan cheese
2 tsp butter

Combine cream, whole eggs, egg yolks, tomato paste, salt and pepper
and beat lightly. Add 2 tbsp cheese. Spoon custard into flan
case, or pie plate. Arrange tomato slices on top, sprinkle with
salt & pepper and herbs and top with remaining cheese. Dot with
small pieces of butter. Bake on top shelf of oven (190C/375F) for
25-30 mins or until filling is set and top is golden.
