Quiche 1 deep dish pie crust 2 cups evaporated milk or half and half or a mixture of both 5 eggs 4 oz. Swiss cheese, grated 1 sm. onion, finely minced Green or red pepper (optional) minced Mushrooms (optional) minced Salt and pepper to taste Pinch of nutmeg 1-2 cups ham diced (can also use bacon, cooked crispy and crumbled, sausage cooked and drained) Saute the onions, peppers and mushrooms in a little butter just until a little soft, drain and set aside. Prebake the pie shell for about 15 minutes at 350F. Remove from oven and set aside. Mix cream, eggs, pepper, salt and nutmeg together. Put ham, onions, mushrooms, green pepper, and cheese in pie shell.
Pour cream mixture over and bake at 350 F for about 45 minutes.
You can also use broccoli, asparagus is in season right now and is great paired with brie cheese- cooked shrimp and crab and different cheeses can be used. Just as long as you have the basic milk, eggs and cheese you are okay, just use your imagination as to what you want or have on hand.
