QUICHE WITH LEEKS
(or onions)

Short Pastry
1 1/4 cups all-purpose flour
1 teaspoon baking powder
3 tablespoons shortening
1/4 cup cold water

Stir together flour and baking powder, with a pastry blender cut in
shortening until mixture resembles coarse crumbs. With a fork mix in water
until pastry just holds together. Grease Tart pan , roll out dough and fit
into pan. Dock crust with a fork, cover with foil or wax paper and cover
with dry beans, dry rice or ceramic pastry weights. Bake in 400 F oven for 8
to 9 min or crust is set.


Reset oven to 375 F

1 large leek
1/2 cup Swiss cheese (grated)
3 eggs
1 1/2 cups milk
4 slices bacon
pinch nutmeg

Brown the bacon in a pan to get rid of the grease. should be crisp.
Beat eggs, milk, and Nutmeg together, add Swiss cheese and Bacon.
Pour into prepared crust. Bake in upper third of oven 30 min. or
until Quiche is set and a little brown. Test with a knife as you
would a custard.
