Shepherd's Pie

22 oz package frozen mashed potatoes or homemade
1 pound ground beef
1 onion, chopped
1/2 cup frozen sliced carrot, thawed (optional)
2 tablespoons flour
2 tsp. salt, divided
1/2 tsp. pepper
1 cup beef broth
1 large egg, slightly beaten
1/2 cup shredded cheese

Cook potatoes according to package directions. Set aside. Cook
beef with onion in large skillet for 5 to 6 minutes stirring until
beef crumbles and no longer pink. Drain and return to skillet.
add carrots (or any other vegetables).

Stir in flour, 1 tsp. salt, and pepper. Add beef broth and cook,
stirring constantly, 3 minutes or until slightly thickened. Spoon
mixture into lightly greased 11x7 baking dish. Stir together
potatoes, egg, and remaining salt and some pepper. Spoon over
beef. Bake 350 for 25 minutes. Sprinkle with cheese and bake
another 5 minutes.
