Shepherd's Pie

1-2 pounds ground beef, lamb, turkey or chicken
1 large onion chopped
2 tablespoons flour
4-6 potatoes, cooked or 4-6 servings of cooked instant mashed potatoes
1 cup cheddar cheese or more
1/2 cup milk

Cook and brown the meat with the onions. It's worthwhile adding
some water initially and removing any excessive fat with a strainer
pitcher. Stir in the flour and cook on low until most of the liquid
is absorbed. Mash potatoes with the milk, add salt and white pepper
to taste and mix in the cheese.

Place meat and onions in a casserole, cover with the mashed potatoes.
Ridging or creating a design with a fork and sprinkling a little
paprika improves the appearance.

Broil or cook at 400 until the top is golden brown.
