Spinach and Cheese Pie

1/2 cup fresh dill
1/2 pound fresh spinach
1 bunch parsley
1 whole leek, quartered and diced
4 whole scallion, chopped
1 1/2 cups feta cheese, shredded
salt and pepper, to taste
5 whole eggs
1/2 cup semolina flour
1 tablespoon olive oil
1/2 cup milk
2 packages phyllo dough, or as needed

Brush large, deep lasagne pan with olive oil. Mix all of above
ingredients, except phyllo dough, together in large bowl by hand.
Lay 10 thin leaves of phyllo dough along the bottom of the pan and
press into place. Brush lightly with olive oil. Add a layer of
the spinach filling. Top with a layer of phyllo. Brush with olive
oil and repeat layers. End with a layer of phyllo on top. Brush
top with olive oil. Bake at 350 degrees for about 25 minutes.
