Spinach and Cheese Pie
1 onion chopped
1 tbsp olive oil
4 cups cooked spinach, well drained and chopped
2/3 cup bechamel sauce
1 cup shredded cheddar cheese
salt, pepper, grated nutmeg
2 piecrusts (store bought or made at home)
1 egg yolk, beaten
Make the bechamel (2 tbsp butter, 1 1/2 tbsp flour, 1 cup milk --
melt butter, whisk in flour, slowly add milk and then simmer for
Saute the onion in the oil until soft, about 5 or 6 minutes. Add
the cooked spinach and mix. Remove from heat, mix in the bechamel
and add the cheese. Season with salt, pepper, nutmeg.
Put 1 pie crust in pie pan, pour the spinach and cheese mixture
into the crust, and then place the other pie crust on top of that.
Crimp the edges together. Brush the top of the pie with the beaten
Bake in a preheated 400 F oven for 25 to 30 minutes.
