Spinach Pie

16 sheets filo
1/4 cup melted butter

6 cups washed, chopped spinach
1 med. onion
2/3 cup feta cheese
2/3 cup cottage cheese
2 eggs
2 tsp fresh OR 1/2 tsp. dried oregano
1/4 tsp. salt
1/4 tsp. black pepper

Preheat oven to 400F / or 200C.

Saute chopped onion in a little butter, add spinach, reduce heat
to med/lowish and cover, cook about 3 min or until spinach shrinks
down a little.

Mix spinach and onion with cheeses, eggs and seasonings in large
bowl. On a cookie tray, spread 8 filo sheets, one at a time, using
a pastry brush to spread melted butter. Spread spinach and cheese
mixture over buttered filo, and repeat buttering proceedure with
top 8 sheets (you may need to melt a little extra butter). Tuck
under the edges, (about a 1"tuck) Bake at 400F (200C) for about 20
min or until golden, let stand 5 minutes before cutting.
