Spinach Pies
Pre-bake 2 frozen 8" pie shells (see package directions) and cool.
Cook 2 10-oz boxes frozen chopped spinach (see package directions),
cool and squeeze dry.
Saute 1/4 cup minced onion in 2 tablespoons butter and cool.
Combine spinach and onion with:
3 lightly beaten eggs
1/2 tsp. salt
1/4 tsp nutmeg
1/4 tsp pepper
1 pound ricotta cheese
1 cup light cream (or evaporated milk)
1/2 cup grated Parmesan cheese
Fill pie shells and bake at 350 for about 1 hour.
