Spinach 11

Spinach Pie
3 eggs, beaten
1 cup evaporated skim milk
1 tsp salt
dash pepper
1/2 cup grated Swiss cheese or more to taste
1 box chopped spinach
3 oz cream cheese, softened
scant 1/4 cup grated onion
Cook spinach for 2 minutes and drain well.
Make pie shell. Place filling in unbaked pastry shell just before
baking. Sprinkle Parmesan cheese on top before baking, may also
add some nutmeg. Bake 400 degrees for 30 minutes or until knife
inserted in center comes out clean. Let sit 5-10 minutes before
serving.
