TAMALE PIE

1/2 cup cornmeal
3 cup cooked meat (ground beef is good)
1 (8 oz.) can tomato sauce
1 (1 lb. 4 oz.) can whole kernel corn
2 Tbsp. salad or olive oil
10 ripe (black) olives
2 tsp. salt
a few grains cayenne
1/4 tsp. pepper
1 tsp. dried basil or tarragon (optional)

Combine and stir cornmeal, 1/2 cup cold water, 3/4 teaspoon salt.
Place in the top of a double boiler 2 cups of boiling water. Stir
in cornmeal mixture gradually. Cook and stir the mush mixture over
a quick flame for 10 minutes. Steam it, covered, over boiling
water for 1 hour or more. Stir it frequently. Should be 3 cups of
mush. Line a baking dish with mush. Place meat over it. Combine
rest of ingredients and pour over meat. Sprinkle the top with 1
cup grated Parmesan cheese. Bake the tamale pie in a moderate oven
(350 degrees) for about 45 minutes. Serves 6.
