Tortiere/French Canadian Meat Pie

1 onion, chopped fine
2 tablespoons butter
2 tablespoons cornstarch or 3-1/2 tablespoons flour
1 teaspoon salt
1/4 teaspoon nutmeg
1 clove garlic
1 1/2 pounds ground pork
3/4 cup boiling water
1/2 teaspoon pepper
1/2 teaspoon sage
1/8 teaspoon cloves
chopped celery leaves

Saute onion and garlic in butter (about 5 minutes) Add ground
pork. Cook stirring regularly, (about 5 - 8 minutes). Sprinkle
with cornstarch or flour. Add spices and water. Bring to a boil,
simmer 25-30 minutes. Cool. Skim fat collected on surface.

Sprinkle more cornstarch or flour into pie shell before adding
meat. Pour meat mixture into pie shells.

Add top crust. Bake at 425 degrees F. for 15 minutes then lower
oven temperature to 350 degrees F for 30 minutes.
