Easy Vegetable Pie
1 small onion, chopped
1 stalk celery, diced
1 bag frozen vegetables (broccoli, red pepper, cauliflower, etc.)
1 cup shredded cheddar
3/4 cup Bisquick
1 1/2 cups milk
1 tsp. salt
1/4 tsp. pepper
Preheat oven to 375. Grease casserole dish. Place vegetables in
dish, pat dry with paper towels. Add onion, celery and cheese.
In med. bowl, beat eggs, milk, Bisquick, salt and pepper. Beat till
smooth. Pour over vegetable mixture. Bake 35-40 min.
