folders--made it last week and it was delicious!!
BLUEBERRY GRUNT
1 pound blueberries (I used frozen, let thaw) 1/4 cup sugar 1 tsp ground allspice 2 tbs lemon juice 1 tsp grated lemon rind 1/4 cup maple syrup
CRUST: 1 cup flour 1 1/2 tsp baking powder 1/4 tsp salt 4 tbs butter 1/2 cup light cream (or half and half)
For the crust: Sift the flour, baking powder and salt into bowl. Cut the butter into small pieces and add to flour, working it in with your fingertips until it resembles coarse crumbs. Stir in the cream until the mixture forms a soft dough. If too stiff, add a little milk; set aside. Put the berries, sugar, allspice, lemon juice, rind and syrup in a saucepan over low heat, stirring constantly until the sugar has dissolved. Cook gently for 5 minutes, stirring constantly. Drop tablespoonfuls of dough mixture over the blueberry mixture (in the saucepan) so that it is completely covered. Cover the pan and simmer for 20 minutes or until the topping is puffed and browned. Makes about 4 servings.
