ITALIAN CHOCOLATE CHIP PIE (CANNOLI PIE)
12-oz. container fat-free pot cheese (dry cottage cheese) 2 whole eggs or 1/2 C. thawed no-cholesterol egg white product 1/2 C. white creme de cacao liqueur 1/4 tsp. bottled orange peel (optional) 2 egg whites separated from fresh whole eggs 1/8 tsp. salt 12 tsp. sugar 3 T. miniature chocolate chips ready-to-fill graham cracker crust
Combine pot cheese, eggs, creme de cacao and optional orange peel in a covered blender and process smooth. Meanwhile, combine the fresh egg whites and salt in a nonplastic mixer bowl and beat stiff with an electric mixer. Add the sugar a little at a time. Gently but thoroughly fold in the cheese mixture, then gently fold in chocolate chips. Spoon into pie shell and bake in a preheated 325 degree oven one hour. Chill before serving. Makes eight servings, about 185 calories each.
